Kopi Luwak Cappuccino Cream Stout – partial mash

Kopi Luwak Cappuccino Cream Stout Recipe – partial mash 

I have reciently tasted some wonderfull coffe beers and wanted to create something on my own.

I took a Sam Adams Cream Stout clone recipe and tweeked it 


  1. 10oz Crystal 60L malt
  2. 0.5lb Chocolate malt
  3. 2.5lb 2-row malt
  4. 6oz black barley malt
  5. 1lb wheat LME (liquid malt extract)
  6. 4lb amber LME
  7. 1lb lactose 
  8. 0.75oz Golding hops, .5oz Glacier hops (60 min)
  9. 0.25oz Golding hops (15 min)
  10. Wyeast London ESB 1968 yeast


You will notice I substituted the 1 lb of maltodextrin for 1 lb lactose to turn it from a cream stout to a milk stout. I will use then 3 oz Kopi Luwak coffee (added to secondary) to finish off the beer.

COLD COFFEE RECIPES IS A GREAT SUMMER DRINK


Cold Coffee recipes is a Great Summer Drink | Cold coffee is a great refresher to the summer and can perk anyone up as well. Some of my favorite recipes include the use of cold coffee! Today I will discuss a few of the different ways you can use cold coffee at home to liven up a drink or meal, and how to prepare it!

My favorite way to use cold coffee, is in an iced coffee drink. I like to brew extra strong pots of coffee and cool them down in the fridge. Something for sweet and decadent a Vietnamese iced coffee or a Thai iced coffee. These are wonderful for a hot summer day and for offering to guests and family as a sweet treat.

Another way to make use of cold coffee is to brew it the old fashioned way. That is simply taking coffee grounds and soaking them in water overnight. Once the coffee has steeped, you simply take cheesecloth to strain the coffee from the grounds. You can then pour the strained coffee in pitcher and keep it in the fridge. The key to making this is to make it stronger than you usually would.

One of the my popular treats you can make is a java smoothie or Frappuccino. These drinks are all the rave at the local coffee shops, and are very simple to make at home. Having the cooled brew helps to keep the drink nice and sweet. After adding the cooled coffee, ice, and desired sweeteners, such as chocolate syrup, you simply blend until you have reached the desired level. This is a great treat to indulge in on a special occasion, date night, or even a Monday morning!

Another great reason why you would want to keep this on hand is if you enjoy baking. One of the best chocolate cake recipes I have ever tasted, a decadent chocolate cake, involves pouring in a cup of cooled coffee. The extra strong brew makes the perfect background for a gourmet and decadent chocolate cake. I think like to use some ground espresso in the icing to tie the coffee and chocolate flavors together.

Mix this with sugar, cardamom, cream and almond extract. You can use as much of as you would like. so it's best to experiment with what works best for you. The spicy taste of the cardamom works great with the coffee and the cold ice makes it refreshing!

3. Frappuccino
Who doesn't love an iced or frozen Frappuccino on a hot summer? You don't have to shell out big bucks if you make it yourself. Use strong and cold coffee for this so the taste really stands out. Once you have this, pour it into a blender with some crushed ice. Add in your choice of milk and sugar.  If want to add a different flavor you can also add in some flavored syrup (there are sugar free options). Once this is all blended up, pour into a glass and serve with whipped cream on top. You can also add a drizzle of caramel or chocolate sauce if you like sweeter.

4. Mexican Iced Coffee
Anyone who has yet to try Mexican Iced Coffee. This has a kick but all the flavors work really well together. The ingredients you need include: milk, chocolate syrup, sugar, instant coffee, ice and ground cinnamon. Optional ingredients include: whipped cream, cinnamon sticks and tequila.

You can also use regular cold coffee if you don't have instant available. Once this is all blended up together in a blender. Add in tequila before you blend if you want an extra kick and then top with whipped cream, if desired.

NEW RECIPE DATE SCONES STARBUCKS


Starbucks Date Scones | Date Scones Starbucks recipe

1-1/2 cups flour
1/2 cup whole wheat flour
1/4 cup bran
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoons cinnamon
1/4 cup brown sugar
1/2 cup butter, unsalted, chilled
1 egg
2/3 cup buttermilk
2/3 cup chopped dates

Combine the all purpose flour, the whole wheat flour, the bran, baking powder, soda, salt, cinnamon and brown sugar. 

Cut in the butter. (Or combine in a food processor, just until crumbly.) 

Add the egg, buttermilk and dates; do not over mix. If the dough seems too sticky to work with, add a couple more tablespoons flour. 

Shape the dough into a rectangle about 1" thick on a floured surface. Cut into 12 triangles. 

Bake on an ungreased baking sheet in a preheated 350F degree oven about 25 minutes. 

Cool on a rack.

MOCHA COFFEE STARBUCKS - ALL VARIANT RECIPES

Starbucks Mocha Frappuccino


6 cups double-strength freshly brewed dark roast coffee
2/3 cup unsweetened cocoa powder, plus additional cocoa powder for garnish
2 cups nonfat milk

Fill ice-cube trays with half of the brewed coffee and place in the freezer. 

In a bowl, combine the remaining brewed coffee, cocoa powder and milk and stir to dissolve the cocoa. Cover and chill.

When the ice cubes have frozen, transfer them to a kitchen towel and, using a hammer or mallet, crush the cubes. 

Fill 4 glasses with the crushed ice and divide the coffee-cocoa mixture
evenly among them. 

Dust the top with cocoa powder and serve.


White Chocolate Mocha


2/3 cup whole milk
6 tablespoons white chocolate chips
coffee
whipped cream

Add milk and chocolate chips to a saucepan or double broiler and heat until chips are melted.

Meanwhile make coffee in espresso machine, pour half of milk.

Add mixture to coffee mug and fill rest of the mug with coffee saving enough room for a dollop of whipped cream

Enough for two mugs.

You may also use Toranis™ White Chocolate Syrup.


Starbucks Peppermint Mocha


3 tablespoons chocolate syrup
11/2 tablespoons Peppermint Syrup (Starbucks or Toranis)
1 ounce espresso
12 ounces steamed or heated milk
Whipped cream
Red sugar sprinkles

Pour syrup into a twelve-ounce mug, add a shot of espresso, and Peppermint syrup. 

Fill the remainder of the cup with steamed or heated milk. Garnish with whipped cream and red sugar sprinkles.


Starbucks Mocha Slush


6 cups double-strength freshly brewed dark roast coffee

2/3 cup unsweetened cocoa powder, plus additional cocoa powder for garnish
2 cups non fat milk (2% or 1% if you prefer)

Fill ice-cube trays with half of the brewed coffee and place in the freezer. 

In a bowl, combine the remaining brewed coffee, cocoa powder and milk and stir to dissolve the cocoa.

Cover and chill. When the ice cubes have frozen, transfer them to a kitchen towel and, using a hammer or mallet, crush the cubes. 

Fill 4 glasses with the crushed ice and divide the coffee cocoa mixture evenly among them. Dust the top with cocoa powder and serve.

Serves 4.


Starbucks Iced Mocha


Fill cup with ice pour in milk of choice (2%, skim, soy) add Hershey™ liquid chocolate (not the powdered stuff) drop in the espresso shots ( 1 or 2 ).

stir until chocolate is mixed in well top off with whipped cream.

How much milk, chocolate, and espresso you add will depend upon your taste preferences.

Experiment till you get the perfect ratio.


Starbucks Chocolate Fudge Squares with Mocha Glaze


1/2 cup unsalted butter, at room temperature (1 stick; see note)
1 cup granulated sugar
1 egg
1 cup all-purpose flour
1/4 teaspoon baking powder
2 ounces unsweetened chocolate, melted
1/2 cup milk
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Glaze

1 generous cup powdered sugar
1 tablespoon unsalted butter, at room temperature
1 ounce unsweetened chocolate, melted
1 teaspoon vanilla extract
1/4 cup brewed double-strength coffee, preferably made from dark-roasted beans

Preheat oven to 350 degrees F. 

Butter an 8-inch square baking pan. 

To make fudge squares: In a large bowl, cream the butter with the sugar and egg.

In a small bowl, sift together the flour and baking powder. 

Add to the butter mixture. Then add the melted chocolate, being careful not to over-beat. 

Add the milk, vanilla and walnuts, stirring just to blend.

Pour the batter into the prepared pan. Bake until the edges begin to pull away from the sides of the pan and the top springs back when pressed lightly, about 30 minutes. 

Allow the cake to cool completely. Meanwhile, make glaze.

To make glaze: In a medium bowl, combine the powdered sugar, butter, chocolate and vanilla extract. Stir in the coffee and whisk until smooth.

VANILLA ICED COFFEE RECIPE

Prepare coffee twice the usual strength. Pour hot coffee over cracked ice in tall glasses, or over block of ice in large pitcher. Serve with plain or whipped cream and sugar or serve black.

Half fill tall glasses with cracked ice, sprinkle powdered sugar over ice, as desired, and place 1 tablespoon whipped cream in each glass. Pour hot strong coffee into iced glasses.

Iced Cafe au Lait

Pour 1 cup double strength coffee over cracked ice in tall glass; add small scoop vanilla or coffee ice cream; serve at once.


Shake or beat thoroughly 1 cup strong coffee, 1 tablespoon chocolate syrup, 2 tablespoons whipped cream, and 3 tablespoons chipped ice. Serve immediately. A cute idea for parties or gatherings is to purchase custom coasters, sandstone coasters, or coaster sets with cups of coffee or coffee beans printed on them.


Half fill 6 tall glasses with chopped ice; pour hot strong coffee over ice until glasses are three-fourths full, and top each with a heaping tablespoon of vanilla ice cream. Use 1 quart hot coffee for 6 glasses.

Coffee Delight

4 cups iced coffee 
1 cup whipping cream 
8 tablespoons sugar syrup 
1 quart ginger ale

Mix coffee and syrup. Fill 8 tall glasses 3/4 full of crushed ice. Whip cream; into each glass put 1/4 cup cream, 1/2 cup coffee mixture and 1/2 cup ginger ale. in the mix

Ever since the War of 1812 stopped the importation of tea into America, American's have been in love with coffee. Black, blonde, sweetened only, the various ways of drinking coffee are astonishing.

Some recipes are quite simple, just add a flavoring and voila. Other recipes are more detailed and require following a series of steps. There are even recipes that use the bean to transform other beverages into new and exciting flavored beverages.

Coffee Drinks

These drinks are extremely popular, even among people who don't typically drink coffee. This recipe combines sweet apricots with chilled coffee to make a wonderful creamy drink. Serve it in tall glasses on a warm summer afternoon and delight the guests.

Apricot Iced Coffee

Ingredients

3/4 cup chilled coffee
1/2 cup cup chilled apricot juice
1/2 pt softened vanilla ice cream.
1/2 cup of fresh apricots.

Instructions: 

Mix the coffee, milk and apricot nectar together in a bowl.
Add the softened ice cream and beat until smooth.
Blend fresh apricots in a blender until smooth. Pour the apricot mixture into a glass and top with the mixture.
For entertaining purposes, surprise guests with a punch. Offer liqueurs an optional add-in for those who would like to have them. Bailey's Irish Crème goes quite well with this recipe.

Coffee Punch

Ingredients

2 quarts of vanilla ice cream, softened.
2 quarts of strong brewed coffee, cooled.
2 cups of milk
2 cups of whipping cream, whipped.
1/2 cup of sugar.
1 tablespoon of vanilla extract
Ground nutmeg.

Instructions:

Combine the coffee, milk, sugar, and vanilla; stir thoroughly. Chill.
Place the vanilla ice cream in a large punch bowl.
Pour the coffee mixture over top of the ice cream, stirring gently.
Top with whipped cream, sprinkle with nutmeg, and then serve.
On a cold winter morning, gather the family together for cake and a steaming cup of Mocha Coffee. Transfer the finished product to a thermal carafe and serve at the table or leave in a warming pot on the stove.

Mocha Coffee

Ingredients

14 oz (one can) of evaporated milk
2 cups of strong coffee
1 cup of hot water
1/2 cup of pure cocoa powder
1/2 cup of sugar.

Instructions

In a suitably sized saucepan, mix together the cocoa powder and sugar.
Add the hot water and whisk lightly until smooth.
Heat gently for 2 minutes until the mixture turns thick, stirring constantly.
Add the evaporated milk and the coffee.
Heat to just boiling, beat, then serve as desired

ICED COFFEE, FRAPPUCCINOS AND MORE - RECIPES


Recipes For Iced Coffee, Frappuccinos and More!

I love everything coffee: hot coffee, iced coffee, coffee ice cream, coffee-flavored candy. The only thing I do not like about coffee is how much they are charging now-a-days for a cup! You can easily pay up to $5.00 for a specialty coffee. I know. I have done it and will likely do it again and again and again. Why? Because I LOVE coffee.

Luckily I work from home and make my own coffee 95% of the time. I am very picky about the coffee that I buy. I tend to stick with Starbucks and Dunkin Donuts-brand coffee when they go on sale and I have coupons. I am so glad that I do not work out of the home because I know that I would be among those that go through the drive-through for my cup of coffee just about every day. I just know it!

I just ran across a couple of facts regarding those who do go through the drive-through often:

  1. People who buy coffee primarily at drive through windows on their way to work will spend as much as 45 hours a year waiting in line.
  2. The average person who buys coffee outside the office to consume at work will spend the equivalent value of a round trip plane ticket to Florida every year.


WOW! Can you believe that? Thank God I make my coffee at home! I can drink coffee all day every day. However, when it is 100 degrees outside, a HOT cup of coffee just does not sound appealing to me; therefore, I decided to look up a few Summer coffee recipes since going to Starbucks everyday is definitely not an option for me. I do not have the time nor the money to spend going through a drive-through to get a good cup of coffee! Besides, I want to be in control of what I put in my coffee since I am trying to cut back on my calories.

Have you looked up the calories contained in some of those drinks?

Note: You can purchase all of the specialty syrups used in Starbucks drinks at any Starbucks store! You can also go online and order DaVinci Gourmet Syrup at only $7.99 a bottle. DaVinci syrups have no calories and they are sugar free! I have searched several stores on several occasions for DaVinci syrup, but have not had any luck. Your luck might be better than mine, but, if not, you can go online. Some of the following are copycat recipes from one of your favorite coffee stores!

Iced Coffee:


1. Start with a rich flavorful coffee.

2. You can make your coffee in advance or let it cool, although I find that just filling my glass up with ice and pouring the hot coffee over it works just fine!

3. Add cream and sugar or a sugar substitute. You can also try adding a little syrup. We even tried sugar free pancake syrup because we ran out of sweetener and it tasted great!

Coffee Popsicles:

Mix your coffee how you like it and just freeze. You can use a Popsicle mold or ice cube tray. You can even put these ice cubes in your iced coffee!

Caramel Macchiato:


Ingredients:

2 tablespoons Vanilla Syrup 
1/2 cup fresh brewed Espresso (You will have to have an Expresso machine.) 
8 ounces steamed milk (You actually do not need an Expresso machine to make steamed milk. See how to steam milk here!) 
3 to 4 tablespoons Caramel Sauce or Caramel Syrup

Instructions 

Add vanilla syrup to 16 oz glass. 
Add steamed milk and caramel sauce/syrup and stir well.

Coffee Frappe: 


Ingredients: 

18 -22 Ice cubes, crushed 
7 ounces Double-strength coffee, chilled 
2 tablespoons granulated sugar 
2 tablespoons flavored syrup of choice (vanilla, hazelnut, raspberry or other)

Whipped cream


Java Chip Frappuccino: 


Ingredients: 
4 tablespoon chocolate syrup 
4 tablespoon chocolate chips (you can substitute sugar free chocolate cut up into pieces) 
4 cups double-strength freshly brewed dark roast coffee 
Chopped or crushed ice 
Whipped cream (optional) 
Chocolate syrup (for drizzle, optional)

Fill blender half full with chopped or crushed ice. Add all ingredients (except whipped cream) and blend until thick and still icy. Pour into 4 tall glasses, top with whipping cream and drizzle chocolate over the whipped cream.

Mocha Frappe: 


Instructions: 
Fill blender half full with chopped or crushed ice. Add all ingredients (except whipped cream) and blend until thick and still icy. Pour into 4 tall glasses, top with whipping cream and drizzle chocolate over the whipped cream.

Instructions 

Place the ice, coffee, sugar and syrup in a blender. Blend until the frappe is smooth. Pour into a large, tall glass. Garnish with a dollop of whipped cream.

Java Float: 


Ingredients: 

4 tablespoon chocolate syrup 
1 tablespoon chocolate chips (substitute sugar free chocolate as above) 
2 cups club soda or sparkling water, chilled 
4 scoops coffee ice cream (look for sugar free or low carb ice cream)

Instructions

In each of 2 tall glasses, stir together 2 Tbsp. of chocolate syrup and 1 cup club soda. Place 2 scoops of ice cream in each glass and serve immediately.

Molasses-Kissed Vanilla Porter

OG = 1.065 FG = 1.020
IBU = 24 SRM = 43 ABV 5.8%

A sweet porter accentuated with the aroma and flavor of vanilla. The chocolate and vanilla aroma is very enticing and the caramel sweetness complements the chocolate and vanilla flavor. A well-balanced porter, with vanilla character at the forefront.

Ingredients

11.75 lbs. (5.3 kg) 2-row pale malt
1.0 lb. (0.45 kg) crystal malt (90 °L)
1.0 lb. (0.45 kg) chocolate malt
2 tbsp. molasses (10 min)
5 AAU Kent Goldings hops (60 min)
(1.0 oz./28 g of 5% alpha acids)
0.5 oz. (14 g) Hallertau hops (15 min)
0.5 oz. (14 g) Hallertau hops (5 min)
5 whole vanilla beans (secondary)
splash of bourbon (or your favorite substitution)
Safale S-04 dried yeast

Step by Step

Infusion mash at 153 °F (67 °C) for 60 minutes. Raise to 168 °F (76 °C) for 15-minute mashout. Boil for 60 minutes, adding molasses at last 10 minutes of boil. While beer is in primary fermentation, split vanilla beans and chop in to 1/2-inch sections. Soak for at least three days in enough bourbon to cover beans. Rack beer on top of vanilla beans and bourbon in secondary. Condition for a week.

4.5 lbs. (yy kg) Munton’s Light liquid malt extract (late addition)
2 tbsp. molasses (10 min)
5 AAU Kent Goldings hops (60 min)
(1.0 oz./28 g of 5% alpha acids)
0.5 oz. (14 g) Hallertau hops (15 min)
0.5 oz. (14 g) Hallertau hops (5 min)
5 whole vanilla beans (secondary)
splash of bourbon (or your favorite substitution)
Safale S-04 dried yeast

Step by Step

In a kitchen pot, steep crushed grains at 153 °F (67 °C) for 45 minutes in 3.0 qts. (2.8 L) of water. Bring 2.5 gallons (9.5 L) of water to a boil in your brewpot. Boil for 60 minutes, adding hops at times indicated and molasses at last 10 minutes of boil. While beer is in primary fermentation, split vanilla beans and chop in to 1/2-inch sections. Soak for at least three days in enough bourbon to cover beans. Rack beer on top of vanilla beans and bourbon in secondary. Condition for a week.

Modern historians dispute this, however, claiming that the line was really written by an ad executive. One thing beyond dispute is that you’ll be sad to see the last drop of this beer go.

Parascalops? Mole? What the hell? Mole (pronounced MOH-lay) poblano is a sauce made with cocoa, nuts, chili peppers and other spices. It is found in a lot of interior Mexican cooking. Parascalops breweri is a mole (rhymes with “hole”), a small mammal that lives in underground. Its common name is the hairy-tailed mole, but it’s also called Brewer’s Mole (after Thomas Mayo Brewer, the naturalist who named it).
