Kopi Luwak Cappuccino Cream Stout – partial mash

Kopi Luwak Cappuccino Cream Stout Recipe – partial mash 

I have reciently tasted some wonderfull coffe beers and wanted to create something on my own.

I took a Sam Adams Cream Stout clone recipe and tweeked it 


  1. 10oz Crystal 60L malt
  2. 0.5lb Chocolate malt
  3. 2.5lb 2-row malt
  4. 6oz black barley malt
  5. 1lb wheat LME (liquid malt extract)
  6. 4lb amber LME
  7. 1lb lactose 
  8. 0.75oz Golding hops, .5oz Glacier hops (60 min)
  9. 0.25oz Golding hops (15 min)
  10. Wyeast London ESB 1968 yeast


You will notice I substituted the 1 lb of maltodextrin for 1 lb lactose to turn it from a cream stout to a milk stout. I will use then 3 oz Kopi Luwak coffee (added to secondary) to finish off the beer.

5 Facts Fun About Coffee That You Should KnowDid you know that our beloved beverage has its mysteries? After all, it is not like it popped off the ground and you can already drink it. It is a beverage that went through a lot of testing and filtering before it was served in your breakfast table. Let us take a trip back in time and uncover some of the greatest mysteries in your favorite drink.

Beverages favorite's call it is the coffee, coffee is the second most consumed beverage in the world after water. Perhaps some interesting facts will give you some clues:

1. The three biggest coffee drinkers in the world are the Americans, the French and the Germans. They consume nearly 65% of the total world's consumption of coffee. Worldwide annual coffee consumption is over 400 billion cups and continues to grow. In 2005, coffee was the seventh largest legal agricultural export in the world by value.

2. In the United States alone, we consume 400 million cups every day, or 35% of the world's total. The statistics show that 54% of the adult population drinks coffee cups on a daily basis, and another 25% of all Americans drink it once in a while. This means that more than three quarters of American adults drink coffee.

3. Men drink as much, if not more, coffee than women. In the year 2000, a National Coffee Association survey reported that the average consumption of coffee corresponds to approximately 1.9 cups of coffee per day for men and 1.4 cups per day for women when looking at the total population. However, when looking at coffee drinkers only, the average consumption is raised to about 3.1 cups per person per day.

4. Coffee is actually a fruit and grows on trees (although often called plants). Coffee trees are not fast growers. In fact, it takes five years for a coffee tree to reach full maturity. Once it's become mature, each mature coffee plant yields about 5 pounds of green (un-roasted) coffee beans per year. This results in less than one pound of coffee beans after roasting. It takes about 4000 coffee beans to produce a pound of coffee and roughly 50 coffee beans to produce one cup of coffee.

5. Even though it tastes "stronger", dark roasted coffees actually have LESS caffeine than medium or light roasts. The longer a coffee is roasted, the darker it becomes and the more caffeine burns off during the process. Similarly, contrary to popular assumptions, espresso coffee actually contains about one-third of the caffeine of a brewed cup of coffee. This is partially due to the fact that espresso is typically made using top premium arabica beans which have a lower caffeine content than robusta beans, which are found in many coffee blends used for standard brewing. Also, in the espresso brewing method, water is in contact with the grounds for only 20 to 25 seconds and extracts less caffeine than methods that put water in contact with the grounds for several minutes.

6. A cappuccino is an Italian coffee drink prepared with espresso, hot milk, and steamed-milk foam. The Italian name 'cappuccino' comes from the long, pointed cowl, or cappuccino, that was worn as part of the habit of the Capuchin Order of Friars. In Italian, the word cappuccino also describes espresso coffee mixed or topped with steamed milk or cream, because the color of the coffee resembled the color of the habit of a Capuchin friar. Some people also believe that the term relates to the aspect of a friar's tonsured (white) head, surrounded by a ring of brown hair.

7. The term "joe" when referring to coffee originates with the fact that coffee has long been a favorite drink among American soldiers. Soldiers in the Civil War, for example, were issued rations of coffee which they brewed in water over camp fires. During World War II, American soldiers were given instant coffee rations and were known to consume large amounts of coffee. Since these soldiers were known as "G.I. Joes", the phrase "cup of Joe" was adapted to describe a cup of coffee.

8. Caffeine can enhance athletic endurance and performance. Until 2004, caffeine was on the International Olympic Committee list of prohibited substances. Athletes who tested positive for more than 12 micrograms of caffeine per milliliter of urine (about 5 cups of coffee) were banned from the Olympic Games. Even though caffeine has now been removed from the list of prohibited substances, the controversy continues as experts differ in their opinions as to whether caffeine consumption on the day of performance can give an athlete an unfair advantage or not.

9. Of all its proprietary products, 7-Eleven sells more fresh-brewed coffee than anything else -1 million cups each day. That's more than 10,000 pots of coffee an hour every hour of every day of the year. Starbucks' sales totals are even more staggering. While Starbucks no longer releases its sales information to the public, it is estimated that it sells over 4 million coffee drinks per day.

10. Coffee can be good for you! Coffee can increase the effectiveness of pain killers, reduce headaches and can help fight asthma, possibly due to the enhanced adrenal effect from the caffeine. Coffee may reduce the risk for some cancers and Parkinson's disease. Recent studies have shown that caffeine reduces the incidence of diabetes by 54% for men and 30% for women. Lastly, coffee's stimulant effects and fat burning potential has some in the medical field pushing it as a means of lowering the incidence of heart disease.

11. Coffee Helps in Protecting Biodiversity! - Did you know that coffee is one of the reasons why some animals continue to thrive in the planet? Aside from providing a great habitat for different species, shade-grown coffee can also protect some animals from harm. It helps them to reproduce and ultimately protects them from extinction. Many coffee companies and purveyors will offer blends that have as little as 5% Kopi Luwak, which is not a true experience with this type of coffee.

Cold Coffee recipes is a Great Summer Drink | Cold coffee is a great refresher to the summer and can perk anyone up as well. Some of my favorite recipes include the use of cold coffee! Today I will discuss a few of the different ways you can use cold coffee at home to liven up a drink or meal, and how to prepare it!

My favorite way to use cold coffee, is in an iced coffee drink. I like to brew extra strong pots of coffee and cool them down in the fridge. Something for sweet and decadent a Vietnamese iced coffee or a Thai iced coffee. These are wonderful for a hot summer day and for offering to guests and family as a sweet treat.

Another way to make use of cold coffee is to brew it the old fashioned way. That is simply taking coffee grounds and soaking them in water overnight. Once the coffee has steeped, you simply take cheesecloth to strain the coffee from the grounds. You can then pour the strained coffee in pitcher and keep it in the fridge. The key to making this is to make it stronger than you usually would.

One of the my popular treats you can make is a java smoothie or Frappuccino. These drinks are all the rave at the local coffee shops, and are very simple to make at home. Having the cooled brew helps to keep the drink nice and sweet. After adding the cooled coffee, ice, and desired sweeteners, such as chocolate syrup, you simply blend until you have reached the desired level. This is a great treat to indulge in on a special occasion, date night, or even a Monday morning!

Another great reason why you would want to keep this on hand is if you enjoy baking. One of the best chocolate cake recipes I have ever tasted, a decadent chocolate cake, involves pouring in a cup of cooled coffee. The extra strong brew makes the perfect background for a gourmet and decadent chocolate cake. I think like to use some ground espresso in the icing to tie the coffee and chocolate flavors together.

You don't have to go to a Thai restaurant to get this, Same with the other recipe, you can easily make it at home. start out with some cold coffee. Mix this with sugar, cardamom, cream and almond extract. You can use as much of as you would like. so it's best to experiment with what works best for you. The spicy taste of the cardamom works great with the coffee and the cold ice makes it refreshing!

3. Frappuccino
Who doesn't love an iced or frozen Frappuccino on a hot summer? You don't have to shell out big bucks if you make it yourself. Use strong and cold coffee for this so the taste really stands out. Once you have this, pour it into a blender with some crushed ice. Add in your choice of milk and sugar.  If want to add a different flavor you can also add in some flavored syrup (there are sugar free options). Once this is all blended up, pour into a glass and serve with whipped cream on top. You can also add a drizzle of caramel or chocolate sauce if you like sweeter.

4. Mexican Iced Coffee
Anyone who has yet to try Mexican Iced Coffee. This has a kick but all the flavors work really well together. The ingredients you need include: milk, chocolate syrup, sugar, instant coffee, ice and ground cinnamon. Optional ingredients include: whipped cream, cinnamon sticks and tequila.

You can also use regular cold coffee if you don't have instant available. Once this is all blended up together in a blender. Add in tequila before you blend if you want an extra kick and then top with whipped cream, if desired.
